Goodness Facts
Yellow & Green Beans have only 25 calories for every 3/4 cup serving.  They are a source of Vitamin A, Vitamin C, Calcium and Iron.  They are also an excellent source of Fibre.

Yellow & Green Bean Care
Choose plump, firm and velvety feeling beans.  Generally speaking, smaller beans tend to be more tender.  Place beans in a perforated palstic bag and store in the crisper section of your fridge.  Enjoy within 3 to 4 days.
Do not overcook your beans!  Overcooked yellow & green beans will lose their vibrant colour and tender texture, not to mention much of their nutritional value.

Freezing Tip:
One of our staff discovered this super easy technique!  Simply snap off ends of beans and cut.  Place in a ziplock bag with 1/2 tsp. of margarine.  Microwave for 1 minute and immediately immerse in ice water to stop the cooking process. Then place the bag in your freezer!

Yellow & Green Bean Salad with Sweet Corn

  • 2 cups green beans, halved
  • 1 cup yellow beans, halved
  • 5 cups fresh sweet corn kernels (from 6 ears)
  • 1 cup finely chopped red bell pepper
  • 1/2 cup finely chopped red onion
  • 1/4 cup white wine vinegar
  • 1/4 cup Dijon mustard
  • 2 Tbsp chopped fresh tarragon
  • 2 garlic cloves
  • 1/2 cup vegetable oil
  • 1/4 cup olive oil

Cook green and yellow beans in large pot of boiling salted water until crisp-tender, about 4 minutes.  Drain and rinse beans under cold water.  Pat dry with apaper towels.  Combine beans, corn, bell pepper and onion in large bowl.  Cover and refrigerate.  Blend vinegar, mustard, tarragon and garlic in food processor.  Slowly blend in both oils.  Season vinaigrette to taste with salt and pepper.  Toss vegetables with enough vinaigrette to coat.
